Tasting Note: The red Novilunio from Ribeira Sacra is made with 100% Mencia grapes. Planted in granitic and slate soils, with different amounts of silt, sand and clay, this wine is produced from integrated viticulture with very low yield and traditional, heroic in terraces. Harvested manually from selected clusters and fermented in stainless steel at a controlled temperature.
It stands out for its cherry red color, with a violet rim and a medium-high layer. Its aroma is intense and clean, reminiscent of currants, berries, ripe fruit and a floral background of violets, with a marked personality. In the mouth it is fresh, balanced and without edges, with a long and complex palate. It is distinguished by its elegance and complexity.
It is a good companion to spicy fish stews, rice, cod, white meats, risottos and legumes.
